Tasty dishes you can prepare using left over rice!
Lemon rice is one of the most common dishes from South India. For making lemon rice you do not require freshly cooked rice but it can also be prepared with leftover rice. It is prepared by mixing cooked rice with a special seasoning for a tangy taste.
Ingredients:2 cup cooked rice
1 lemon juice
2 tsp oil
1/2 tsp mustard seeds
2 tsp of urad dal and chana dal mix
3-4 chopped green chilies
1 pinch hing (asafoetida)
2 dry red chilies
1/4 spoon turmeric powder
10 leaves of fresh curry leaves
2 tsp fresh coriander
Salt to taste
How to cook rice??
Rinse rice and soak for at least 20-30 min.
Remove excess water and pressure cook rice with 2 cups of water and a little salt in it.
Cover the lid and place the cooker on medium flame. Let it whistle for 2-3 times. The rice must be cooked and not mushy.
Once cooked set it aside to cool down to room temperature. Fluff up the rice with a spoon to make it look grainy & firm.
Procedure Of Preparing Lemon Rice:
- Place a small pan on gas to heat on low flame, add oil to it.
- Add mustard seeds and let them splutter, then add red chilies, chana, and urad dal to it.
- Keep stirring dal continuously to golden brown in color and crispy.
- Do not fry for long otherwise, the taste can turn bitter.
- Add hing, slitted green chilies, turmeric powder, and curry leaves mix it well and add rice to it.
- Also, add lemon juice and mix well.
- Lastly, garnish the rice with coriander.
Serve lemon rice with onion raita or coconut chutney.
