Kothimbir (Marathi) means coriander.  Kotbimbir is usually used to garnish dishes but making a dish out of it would be an interesting concept. Kothimbir vadi is a Maharashtrian dish served as snacks or a side bite during your meal. There are many methods of preparing this dish but the most popular one is by deep or shallow frying. Coriander plays a very important role in this recipe so always use a fresh one. These are delicious, crispy, crunchy, a little spicy and full of flavours. Lets quickly look at this recipe: Ingredients: 1 bunch coriander  8-10 cloves garlic  2 tsp sesame seeds  1 tsp carom seeds 1 tsp red chilly powder  1/2 tsp turmeric powder 1 cup gram flour/ besan 3 tsp rice flour 8-10 green chilies roasted 1 tsp jeera Salt as per taste  Oil for deep frying  Procedure: Clean the coriander properly and wash it with water thoroughly. Crispy & Tasty Cheese Chilly Toast

Who doesn't know cheese chili toast, it's one of the favorite delicacies enjoyed around the world by foodies. But the hassle of preparing it keeps it off the list.There are many methods of making cheese chilli toast. But this style is my absolute favorite as it’s so easy, hassle free and you can make it on any pan. It's delicious, crunchy and mouth watering which will absolutely fuel your day.

Health freaks can use brown bread. I often use same.

Ingredients:

4 Slices Of Bread

Processed Cheese - Grated

Butter or Ghee

Green Chillies (which makes it taste AMAZING)

Salt as per taste (optional)

Procedure:

1. Spread butter on each side of bread slices evenly and keep it aside. 

2. Heat the pan on low flame and place the bread slices on it.

3. Spread the grated cheese on it and few diced green chillies.

4. Take another buttered slice and place on it making sandwich.

5. Cook the sandwich on low flame and flip both the sides to make it crispy.

6. Cut the slices in 2 equal portions and serve hot.

This can be served with tomato ketchup, tea or coffee.
